Garvi's Tomato omelette

Lovers in Goa, June 1981

1. Dice 1 large tomato, 1 small onion, 1/2 green pepper. Combine with 1tsp Red chilli powder, 1 cup besan (gram flour), cilantro (coriander leaves) & salt. Add 1/2 cup water for a pastey consistency.
2. Spread the mixture on a hot, flat, oiled griddle - like a pancake. Cover for a minute & flip. Cook for another 5mins or so on a low flame.
3. Best enjoyed with Amul butter (Hello Paula Deen!) or tomato ketchup.
